| Abstract: | Розроблено технології виробництва фруктових та овочевих напоїв на основі
пектинового екстракту, отриманого з свіжих яблучних вичавок – морквяний,
яблучний. Розроблено рецептура фруктових та овочевих напоїв на основі
низькометоксильваного пектинового екстракту. Отримано арактеристика
фізико-хімічних показників пектинвмістних консервованих напоїв. Technology of production of fruit and vegetable drinks is developed on the basis of pectin extract, got from the fresh pressing of apples out – carrot, apple. Compounding of fruit and vegetable drinks is developed on the basis of lowmetoksilition of pectin extract. Description of physical and chemical indexes of pectin to contain of canned drinks is got. |
