Abstract: Sheep breeding is a traditional branch of livestock farming for the south of Odesa region. The main priority of the industry is to obtain high-quality and safe products. The region is a border region, so there is a constant threat of cross-border diseases. The quality of mutton is significantly affected by the area's well-being from infectious and invasive diseases. The issue of helminth infections in animals remains relevant, with the peak of infestation for most of them occurring in the summer months. Due to climate change this issue requires constant monitoring. Taking into account research data from previous years, a bacterioscopic study of 40 mutton samples was conducted in the periods May-August 2024 and 2025 in order to determine the degree of freshness of the raw mutton. Sampling was carried out randomly.
