Abstract: За ураження овець монієзіями виявлено підвищення рівня циркулюючих імунних комплексів у сироватці крові. У тварин з підвищеним рівнем ЦІК встановлено високу бактеріальну забрудненість поверхні туш — 34,5×103 КУО/г КМАФАнМ, 98,4±3,2 КУО/г БГКП; глибоких шарів туш — 2,3×102 КУО/г КМАФАнМ та 23,7±1,8 КУО/г БГКП; печінки — 4,4×103 КУО/г КМАФАнМ та 208,4±7,3 КУО/г. Вживання такої баранини на загальних підставах може спричинити спалахи харчових токсикозів та токсикоінфекцій.
Goal. To determine the level fluctuation in the level of the CIC in infected by moniezia sheep and to establish a link between it and bacterial contamination of mutton. Matherials and methods. Serum and meat from animals of 6−8 months age were examined. We determined the level of the CIC and contamination of meat by E. coli using conventional methods. The damage of animals by moniezia was determined by the method of successive flushing and flotation. Results. In animals of the experimental group in faeces segments of moniezia were discovered (28,4±1,2). Their fatness was below average. In the animals of the experimental group the level of the CIC was 0,143±0,01 mg/ml and in animals of the control group the level of CIC was 0,128±0,05 mg/ml (12 % lower). In the animals with elevated levels of CIC revealed on the surface of carcasses 34,5×103 CFO/g NMAFaM (low sanitary quality of raw meat). In animals from the control group on the surface of carcasses revealed 0,7×103 CFO/g NMAFaM. It corresponds to permissible levels and is 49 times less than in invasive sheep. The bacteria of the E. coli group were detected on the surface of carcasses of the experimental group — 98,4±3,2 CFO/g. Bacterial contamination 2,3×102 CFO/g NMAFaM revealed in deep layers of carcasses from experimental group. It indicates the raw material obtained from diseased and malnourished animals. It was found contamination by colibacillus bacterias — 23,7±1,8 CFO/g. Total bacterial contamination was 4,4×103 CFO/g in the liver of animals with high CIC content; high quantity of colibacillus bacteria — 208,4±7,3 CFO/g. Pathogenic microorganisms and salmonella are not revealed. Conclusions. 1. Increase the level of the CIC in serum established in affected by moniezia sheep. 2. High bacterial contamination of carcasses’ surface is found in animals with elevated serum levels — 34,5×103 CFO/g NMAFaM, 98,4±3,2 CFO/g colibacillus bacteria; deep layers — 2,3×102 CFO/g NMAFaM and 23,7±1,8 CFO/g colibacillus bacterias; liver — 4,4×103 CFO/g. 3. It is advisable to determine the level of the CIC before sending sheep with a reduced fatness at monieziosis for slaughter. 4. The use mutton from infected fy moniezia sheep on general groups can cause foodborne toxic infections.
